Today, I am mourning something. Be not concerned, dear reader, for I do not mourn for anything that matters. I am sad because I miss Arby’s White Cheddar Mac and Cheese. The cheese was deliciously sharp, and very gooey. I ordered it almost everyday for a week once, and I’m completely and utterly lactose intolerant.
I’m being slightly dishonest in my portrayal of loss. White Cheddar Mac and Cheese has been gone from this mortal coil for almost a year. Still, I feel like it has not properly been mourned.
My fiance and I have tried to recreate it, but the recipe doesn’t seem to exist anywhere, solidifying the fact that this concoction was not revered by many. It went unrecognized. It will not be mourned by many. Few knew it.
Isn’t that the way with many magical things? They exist in a moment, and they are defined by that moment. Arby’s White Cheddar Mac and Cheese was a comfort in a dark time, a solution to the question that haunts us every day until we die; “What’s for dinner?” Sometimes times, places, feelings, people, leave us, and we think to ourselves “If we had just given more love, maybe they would have stayed, could have become eternal, affixed to the axis of the whirling universe by starry, diamond chains. Love could have been the charge molecules.” But alas, the world did not know White Cheddar Mac and Cheese like I did, and thus it is a thing of the past. At least Dunkin Pumpkin Donuts are still a thing.
